Abstract
Aspartame is a sweet-taste amino acid which is an artificial sweetener using in the industry for making the food in the daily life. However, excessive consumption of the aspartame will cause the obesity, diabetes and so on. Thus, this article is taking about the mechanism of the regulation of the receptor of the sweetener, which can use in the field of the consumption and taste regulation. The receptor if aspartame is Tas1R2, which belongs to the Tas1R family. The regulation of the receptor is by the G-protein and the termination of the signaling pathway is by recruit beta-arrestin protein to separate the G-protein and the receptor.
